Jenna Rae Cakes without Cookie Sandwiches just wouldn’t be Jenna Rae Cakes at all! Cookie Sandwiches are a staple on our menu and we can’t imagine a day in the shop without them (unless they sell out, of course!).
One day in early 2014, Jenna, Ashley and their sister Chelsea were working one of their all-too-common long shifts together in the tiny kitchen on Academy road filling cookies with ice cream for ice cream sandwiches. One of them said, “why don’t we fill these with buttercream?” and with that simple question, the JRC Cookie Sandwich was born. It is still up for debate as to who actually said ‘”why don’t we fill these with buttercream?”… two votes are for Chelsea and one vote is for Jenna 😉
Since then they’ve been on the menu every day, and each staff member has played a part in creating the lineup of delicious flavours we have available. Our kitchen team loves recreating all of their favourite flavours in the form of Cookie Sandwiches and love the trial and error of finding the best way to make each Cookie Sandwich the absolute best.
Not every flavour idea works out, though–one of the most memorable flavour idea flops was the Fuzzy Peach Cookie Sandwich. We had high hopes for this peculiar cookie, but the sour peach buttercream and the buttery cookie combo did not make the cut!
Staff favourites include the classic Toffee Salted Caramel (by far our best seller!), Blueberry Cheesecake, Birthday Cake Oreo, Lemon Meringue, Grinch Sugar Cookies, our Salted Caramel Apple Crumble, S’mores Brownie and Ginger Crinkle with Eggnog Buttercream.

We start by mixing our dough! Each dough is carefully mixed to ensure our cookies have their soft and chewy texture. Our recipes for our favourite cookie doughs have been perfected over time with trial and error adjustments.
Once the cookie dough is made, we scoop and flatten each cookie. Flattening our cookies encourage spread and get them nice and big!
A question we are often asked is how we get our cookies so consistent in shape and size. The answer– we measure each and every cookie!
Next, we top our cookies with their appropriate decorative touches then bake in our ovens.
Once the cookies cool we begin filling them. Each cookie is filled with delicious buttercream and then, if required for the flavour, stuffed with filling then drizzled with either chocolate ganache or salted caramel. Pictured above is our Salted Caramel Apple Pie Cookie Sandwich. You can see the swirl of salted caramel buttercream, the apple pie filling stuffed in the middle, the salted caramel drizzle and the sprinkle of oat crumble.
The final step is topping each cookie with a matching top and voila! A cookie sandwich is ready for the pastry case and to be enjoyed by you!
