Cotton Candy Cakesicle Recipe

Move over cake pops; cakesicles are here and give us more of the delicious cake and stunning decoration that we all crave! Cotton Candy Cakesicles feature cotton candy cake and buttercream in a pink and blue chocolate shell with sprinkles and glitter that feel like unicorn dreams come true. Make these out of leftover cotton candy cupcakes or cake, or follow the directions below to make these from scratch.

🍭 Cotton Candy Cakesicles (makes 6 cakesicles) 🍭

Cotton Candy Cake Ingredients:
3/4 cup + 2 tablespoons all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup + 2 tablespoons unsalted butter, room temperature, cut into cubes
egg white from 1 egg
2 tablespoons sour cream
2 tablespoons whole (3.25%) milk
1 teaspoon pure vanilla extract
1/2 teaspoon JRC Liquid Cotton Candy

Cotton Candy Buttercream Ingredients:
1 cup unsalted butter, room temperature
1 1/2 cups icing sugar
3/4 teaspoon vanilla bean paste
1 teaspoon JRC Liquid Cotton Candy

Decoration:
2 1/2 cups cup light pink chocolate melting wafers, divided
2 cups light blue chocolate melting wafers
1/2 cup sprinkles

Method:
Cotton Candy Cake

  1. Preheat the oven to 350ºF. Grease and flour an 8-inch by 8-inch square baking dish and set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, baking powder, baking soda, and salt. Mix on low speed for 1 minute until combined. Add the butter and continue to mix on low speed for 1 minute or until the mixture has the texture of wet sand. Do not overmix. Slowly pour the egg white and mix until just combined. Add the sour cream and mix until just combined. Scrape down the sides of the bowl.
  3. In a measuring cup, whisk together the milk, vanilla, and Liquid Cotton Candy. WIth the mixer on low speed, slowly pour the milk mixture into the bowl and mix until just combined. Scrape down the sides of the bowl and mixi again for 10 to 15 seconds. The batter will look a little lumpy.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes or until the edges of the edges of the cake pull away from the sides of the pan and a knife inserted into the middle of the cake comes out clean. Allow to cool completely.

Cotton Candy Buttercream

  1. In the bowl of stand mixer fitted with the whisk attachment, whip the butter on low speed for 30 seconds. Increase the speed to high and whip for 2 minutes. Reduce the speed to medium and add the icing sugar. Whip for an additional 30 seconds. Increase the speed to high and whip for 2 minutes, until the mixture looks light and fluffy. Scrape down the sides of the bowl. Add the vanilla bean paste and Liquid Cotton Candy and whip on high speed for 1 minute.

Assembly

  1. Once cake is completely cooled, into a medium bowl, use your hands to crumble cake into small crumbs. Start by adding 1/4 of the buttercream to the bowl with the crumbled cake and and use a rubber spatula to mix. Continue adding more buttercream in small amounts until cake and buttercream are fully combined, stick together easily and hold their shape. Set aside.
  2. In a microwave safe bowl, melt the pink chocolate melting wafers in 30 second increments, stirring well until smooth. In another microwave safe bowl, melt the blue chocolate melting wafers in 30 second increments, stirring until smooth. To your Cakesicle mould, add a bit of pink chocolate and a bit of blue chocolate and use a paintbrush to paint an even coating of chocolate into the mould covering the bottom and all the way up the sides. Allow to harden. Add in the cake and buttercream mixture until just about even with the top of the mould and add in your popsicle stick. Spread more pink and blue chocolate over top and tap the mould so the chocolate spreads evenly. Allow chocolate to harden.
  3. To decorate, remove Cakesicles from the mould. Use a paint brush to apply In The Clouds Dazzle Dust Edible Glitter. Transfer remaining melted pink chocolate to a piping bag, cut a small hole in the tip, and drizzle chocolate in a diagonal across the full length of the cakesicle. Quickly sprinkle sprinkles on top before the chocolate hardens.

Want to make these using leftover Cotton Candy Cake or Cupcakes? Put your leftover cake or cupcakes into a medium bowl and use a fork to mash them together! This replaces 'step 1' in assembly. Then follow the rest of the assembly steps.
