
Your new brunch go-to recipe has arrived. Sweet and salty maple bacon jam is the irresistible topping to crispy exterior and fully interior maple waffles. Make these for your Easter brunch with family and friends and everyone will be raving!
🧇 Maple Bacon Waffles (makes 12 waffles) 🧇
Ingredients:
Maple Bacon Jam:
1 pound bacon, chopped into 1/4-inch pieces
1 medium yellow onion, diced
1/2 cup packed brown sugar
1/2 cup water, divided
1 tablespoon brewed coffee
2 tablespoons pure maple syrup
Candied Bacon:
2/3 cup packed brown sugar
1/8 teaspoon black pepper or cayenne pepper
1/2 pound bacon, cut in half crosswise
Maple Waffles:
4 1/2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
4 cups whole (3.25%) milk
1 cup vegetable oil
1/4 cup pure maple syrup
4 eggs
2 teaspoons pure vanilla extract
1/2 teaspoon maple extract (optional)
Method:
Maple Bacon Jam:
- Line a plate with paper towels. In a medium skillet over medium-low heat, cook the bacon for 3 to 5 minutes, until it is cooked but still chewy. Transfer the bacon to the prepared plate and set aside.
- With about a tablespoon of bacon fat still in the pan, add the onions and cook on low heat for 10 minutes, until they begin to caramelize.
- Add the brown sugar and 1 tablespoon of the water. Cook for 5 to 10 minutes, stirring regularly so nothing sticks to the bottom of the pan. Add the reserved bacon, the remaining water, the coffee, and maple syrup. Increase the heat to medium. Continue to cook for 5 to 10 minutes, stirring regularly, until the mixture is thick and jammy. Remove from the heat and set aside.
Candied Bacon:
- Preheat the oven to 325F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the brown sugar and pepper.
- Separate the strips of bacon. Add a few strips at a time to the bowl and toss to coat. Arrange the bacon in a single layer on the prepared baking sheet. Bake for 5 minutes, or until the bacon reaches crispiness. Set aside to cool.
Maple Waffles:
- Preheat a waffle iron following the manufacturer's directions.
- In a large bowl, combine the flour, baking powder, and salt.
- In a medium bowl, whisk together the milk, oil, maple syrup, eggs, vanilla, and maple extract (if using).
- Add the wet ingredients to the dry ingredients and stir until combined.
- Spray the waffle iron with cooking oil. Scoop the batter into the waffle iron and cook following the manufacturer's instructions.
- To serve, stack 2 to 3 waffles on a plate. Using a medium cookie scoop, top each stack with a generous scoop of Maple Bacon Jam and add slices of Candied Bacon. Serve immediately.
